Taco Tuesday and I love it!

Yes, I love tacos, nachos, a quesadilla stuffed with goodness, an empanadas made with love, and umbrella drinks. I am a pina colada person (not too sweet please) and most margheritas (sorry Tom if you are reading I am not a fan of lime). I am pretty working at Taco Bell when I was teen plays a big roll. Also, hubby likes things simple i.e. Taco Tuesday, Pizza Friday, Wacky Wednesday (back when we lived close to a Hungry Howie's), good old left overnight night when I need to clean the fridge out ^_^, and well everything is whatever to him. Hell is to be paid if I do not have tacos on Tuesday. He will go out for lunch the next day for tacos somewhere. Thankfully Tijuana Flats is nearby. Otherwise, being the semi good wife will make sure he has tacos on Whacky Wednesday. It is how we roll.





I love my kids, but they hate taco Tuesday, because t it got very boring. As they got older I forgot to expand the menu for more flavor and options. I have made rice dishes, add nachos, virgin drinks for the kids with umbrella ^_~, and what not. Still the eyes roll loudly when they forget it is is Tuesday and ask what's for dinner. "Well, it is Tuesday." then they sad oh will follow. I wish I could good real Spanish or even Tex-Mex foods.



One thing I can make that makes Taco Tuesday less Taco and more yum is enchiladas. I have made two different versions and this one is my personal favorite. The other I made once and I can't say why I stay away.


This is not my recipe. I found this recipe while surfing for something new to Tuesday's menu. I have added the link to the recipe itself. Except, I almost never have refried beans in the house and hubby hates them. I hate cilantro, however, I will add corn (fire roasted if I can get them for cheap). Let me tell you I need to double this just have enough for the 4:5 of us to enjoy. Which is why I add other foods to the lineup.


I wish I had my own pictures to share, but once it is out of the oven the family crowds in around the kitchen to get their "fair share". I am old fashion, but it makes me feel good when it is my turn to get food and there is nothing left. Thankfully, I need to lose 50lbs. ^_~.

P.S. - This can be gluten-free. I used King Arthurs Gluten-Free Flour mix instead of AP flour. Then I used Mission Gluten-Free tortillas for my two enchiladas. I tried corn tortillas and they fell apart before I could roll them. Another trick I would try just so you can save time. Used canned or jarred enchilada sauce. I am only guessing the amount is about 24ounces total.
