Who doesn't love easy dinners? I know Monday - Friday I love easy dinners. One of my many MANY favorite cookbooks is Betty Crocker Easy Family Dinner. I am not sure if it is still in print, but if you find it grab it. I have had this book forever. I have not made everything in this book. The few recipes I made over have been well loved repeatedly.



The first recipe I want to share with you is a family favorite for 4:5 of us. FYI - I 3 kids and 2 are great and adventurous eaters. My husband not so much, but he has come a long way in 28yrs. Then there is the one picky child. Yes, I have one of those which usually means I make 2 meals. Yes, I am and have been one of those moms. I have done every trick in the book. The child is old enough now there have been plenty of nights I told the child to come downstairs and take care of their own dinner.

From sticky fingers, spilled milk, and spilled ingredients these pages have seen better days ^_^.

Below is the recipe that is in my book. I was able to find it online. I know it got one review and they gave it 3 stars. I am telling you to please try the chicken patties and tell me what you think. I love this recipe because you can change it so easily. Don't like pimentos or little red things leave it out. Want gluten-free just change your breadcrumbs. You want to us a spicier or flavored ranch dressing go for it, I have. I love using Marie's Creamy Chipotle Ranch Dressing for zesty flavor. Because my kids loved American Cheese I would cook half with cheese and half without. I always double the recipe to make sure everyone had enough to eat. Plus, they taste great for breakfast with an over easy egg on top.
If you have a Sam's, BJ's, or Costco membership (we had Sam's a long time ago) and get the canned chicken for cheap and not have to wait for the brand I prefer to BOGO at Publix. My go to brand is Valley Fresh Canned Chicken Breast and then Sam's carried a pack of canned chicken. It has been so long since I have been to Sam's, but I think it is Member's Mark. I could be wrong, so please don't hold me to the name.
For sides I love carrot sticks or rippled carrot chips with a side of the ranch dressing I used in the chicken, mashed potatoes, canned green beans 50% less sodium or no sodium when possible.
